TANDOORI CHICKEN

 

Chicken tandoori penne pasta with a velvet spiced cream sauce finished with roasted corn and green onions

Serves 2. |. Prep time- 15 minutes

  • 12 oz Chicken Legs
  • 1 ½ cup uncooked pasta
  • ¾ cup 35% cream
  • ¾ cup milk
  • ½ cup roasted corn
  • ¼ spanish onion diced
  • ¼ diced sweet red pepper
  • 5 pc’s basil leafs (chiffonade)
  • 1 tablespoon parsley
  • Pinch of cumin
  • Pinch of paprika
  • 1 ½ tablespoon sriracha
  • ½ cup cheese
  • ½ stalk green onions cut on a bias
  • Sea salt and cracked black pepper TT
  • 2 tablespoon olive oil
  • Parsley for garnish
  1. Boil pasta as directed on package, usually 7-10 minutes for al dante.
  2. Grill Kebab Factory Tandoori Chicken
  3. In a large skillet combine olive oil onion, peppers, corn, seasonings and chopped herbs.
  4. Deglaze with milk, add 35% cream and sriracha reduce.
  5. Add grilled Kebab Factory tandoori grilled chicken and cheese.
  6. Adjust seasoning before serving.
  7. Garnish with parsley.


 

Chicken or Lamb Kebab

 

Kebab Factory Croissant Sliders

On a mini croissant with a fresh mint and lemon raita finished with sriracha mayo and topped with micro greens

Serves 2. |. Prep time- 10 minutes |  Cooking time-15 minutes

Spicy mayo

  • ½ lemon squeezed and zested
  • 1 ½ tablespoon ketchup
  • ½ cup mayonnaise
  • 1 tablespoon srarachi

Raita

  • ¾ cups small diced cucumber
  • 1 cup yogurt
  • ½ lemon zested and juiced
  • Sea salt and cracked black pepper TT
  • ¼ red pepper
  • ¼ cup chopped parley
  • ¼ cup chopped mint
  • 1 stalk green onion
  • 1 pinch cumin
  1. Grill Kebab Factories Chicken or Lamb Kebab
  2. Combine all ingredients together for each sauce
  3. Use mini croissants and micro sprouts for presentation and sandwich preparation.
